This comes from a friends monthly fitness newsletter and it was amazing to eat and
easy to cook- Enjoy!
What you Need:
1 cup Quartered Cherry Tomatoes or Grape
1 cup Diced Squash
1 cup Thinly sliced Red Onion
12 Fresh Green Beans- trimmed and cut to 1" pieces
1/4 cup of Black Olives
2 Tablespoons of Lemon Juice
1 Tablespoon of Oregano
1 Tablespoon of Olive Oil or Grapeseed would be a good alternative as well
1 Teaspoon of Capers (rinsed)
1/2 t. of Salt
1/2 t. of Ground Pepper
1 Pound of Tilapia fillets cut into 4 chunks
1. Preheat Grill- Medium
2. Combine Tomatoes, Squash, Onion, Beans, Olives, Lemon Juice, Oregano, Oil, Capers, Salt and Pepper in Large Bowl.
3. To Make a Packet: lay 2 sheets of foil on top of each other and coat with cooking spray.
Place Tilapia in center of foil, sprinkle with salt and pepper- top with 3/4 cup of veggie mix.
4. Fold foil- pinch together tightly so it can steam (repeat for more packets)
5. Grill Packets till fish is tender...around 5 minutes
6. Serve and Eat
